Salt is a trendy, chic, and delicious restaurant that you won’t want to skip when you’re in Boulder. It is located in the historic space of Tom’s Tavern, with the original paint still intact on the East side of the building. But now, Salt is the one making history with amazing cocktails, a local menu, and a cozy atmosphere.
Even on a Tuesday afternoon the restaurant was packed, so I recommend calling ahead for a reservation, especially with parties of four or more. Sitting at the bar is a great option though. Every time I’ve eaten at Salt the bartenders have been incredibly friendly and helpful, surprising me with their own concoctions of delicious drinks. The first drink I had was the Flower Sermon (pictured above). The cracked pepper gave it a great flavor and combined with the lemon provided a very refreshing drink.
Salt’s menu changes with the seasons, and only a few items are constantly on it. I always try something new, so this time I went with the Vegetable Tasting (pictured above) and was very impressed. It came with tuscan beans, spaghetti squash, a cabbage shiitake mushroom wrap, mixed grain herb salad, and garlic seared chard all of which were delightful. This would also be a great starter to share before your main meal because it comes with so many things!
As with many new restaurants in Boulder, it’s about more than great food. The friendly servers, beautiful decor and fun space make Salt the perfect place for any occasion.
